National traditions are an inexhaustible source of inspiration for architects and designers around the world. The Minsk design bureau of Alyona Bulata was no exception: after receiving the project of the Belarusian cuisine restaurant “Bulbashi”, Alyona turned to the attributes of local culture and decided to look at them through the prism of modernity.

The institution occupies two floors of a building of the beginning of the XX century in the heart of Minsk. On the upper level there is a welcome area, including an improvised reception, a wardrobe and several tables for guests, and the main halls are located below. The floors are connected by a staircase with floral bas-reliefs on the walls, which are associated with endless fields. Descending the stairs, guests find themselves in a mirrored hall with cozy armchairs and a buffet filled with homemade tinctures.

Next is the “kitchen” with a charismatic hood and shabby cabinets. The walls of the space are painted with quotations from modern Belarusian prose, and the ceiling is decorated with 300 clay jugs made by the local Radoshkovichi factory.

The far hall is designed in the castle style. The central place is occupied by a large glass table, at the base of which is a tree trunk. A metal cage hangs above the countertop, complemented by a composition of dried flowers. Another point of attraction in space is the fireplace, lined with ceramic tiles of the Volkovysk factory, which are still made by hand. The walls are decorated with 3D panels assembled from traditional Belarusian household items, which seem to be covered with a white tablecloth.

Between the two halls there is an unusual pantry where guests can buy branded pickles and tinctures. The restaurant’s menu consists mainly of local ingredients. The chef of “Bulbashey” Artem Raketsky himself travels around Belarus in search of a high-quality local product.
